Generally, I announce the beginning of summer after the school year closing ceremony, when even a thin blanket is too thick, and I have to store my lipsticks in the fridge.
At this time it’s just nonsense to turn on the oven, so if I want something sweet, the only option is a quick and easy, refreshing jar dessert. Furthermore, I have way too many raspberries in my garden this year, so I must have done something with them.

- 2 cups of raspberry
- 1/2 lady fingers
- 250 g mascarpone cheese
- 150 g Greek yogurt
- 250 ml heavy cream
- 2 tbsp sugar
- Blend the raspberries, and keep a few pieces for garnish.
- In a medium bowl combine the mascarpone, yogurt, cream, and sugar, then beat it with an electric mixer, until the cream is medium-firm.
- Smash the lady fingers, then start to build up the layers.
- Finish with cream, and raspberry pieces.
